Theres nothing that tastes quite like our Burmese Malar noodles. It is the ultimate comfort food! A hearty bowl of rice noodles with vegetables, tofu and oyster mushrooms tossed in a fiery 'Malar' sauce. A delicious medley of sweet soy, red chilli, kokum and onion. The addition of kokum is what makes this sauce truly unique, adding a layer of fruity tartness to the sweet and spicy sauce. The noodles in this dish are also thicker and broader so as to envelope every inch of that delicious sauce on to them. Slurpy goodness at its best!
Ingredients:
Greens: Broccoli, Babycorn, Carrot, Zucchini, Shiitake Mushrooms, Black & White Fungus, Bok Choy, Lotus Stem, Potato,
Noodles, Malar Paste, Tofu and Mock Meat, Flavored Oil
DIY Notes:
Cooking Time: 15 minutes
Serves: 3 to 4
Things Required At Home: Cooking pan, Boiling vessel, Water for boiling/blanching, Serving bowls
Cooking Instructions:
1. Blanch vegetables in boiling water for 1 min and strain them out. Blanch noodles in the same water for 2 mins.
2. Add 200 ml water & the Malar paste in a separate pan. Let it come to a boil. Add in the blanched vegetables & noodles to it.
3. Cook together for a minute on high flame. Drop in tofu and mock meat just before taking it off the flame.
4. Serve in 3 to 4 serving bowls and drizzle 1 tsp of the flavored oil as a garnish.
Chefs Tip: Reduce the quantity of vegetables if you like your noodles to be saucy.
